Many thanks to Chef Michael Edwards, ProStart Instructor & Mentor, and the EHOVE staff for creating this Poultry Fabrication - The ProStart Way Video.  This video will illustrate how to fabricate  chicken referencing instructions from the ProStart Year 2 textbook.  Culinary judges will be instructed to use these resources for judging purposes.
